Ingredients
10 items
- 1 tbspolive oil
- 1onionfinely diced
- 1red pepperdiced
- 500 gground beef
- 2 tbsptaco seasoning
- 8 pieceflour tortillas
- 100 giceberg lettuceshredded
- 2tomatodiced
- 100 gcheddar cheesegrated
- 100 mlsour cream
Method
5 steps
Step 1. Sauté the aromatics: Heat the olive oil in a large skillet over medium heat. Add the diced onion and red pepper and cook for 4–5 minutes, stirring occasionally, until softened and the onion is translucent.
Step 2. Brown the beef: Increase the heat to medium-high and add the ground beef. Break it up with a wooden spoon and cook for 5–6 minutes until fully browned with no pink remaining. Drain any excess fat from the pan.
Step 3. Season the beef: Reduce the heat to medium, sprinkle over the taco seasoning, and stir well to coat the meat evenly. Add a splash of water (about 2 tbsp) to help the seasoning absorb and simmer for 2 minutes until the mixture is saucy and fragrant.
Step 4. Warm the tortillas: While the beef simmers, warm the tortillas one at a time in a dry skillet over medium heat for 20–30 seconds per side, or wrap the stack in a damp paper towel and microwave for 45–60 seconds until pliable.
Step 5. Assemble and serve: Spoon a generous portion of the beef mixture down the centre of each tortilla. Top with shredded lettuce, diced tomato, grated cheddar, and a dollop of sour cream. Serve immediately while the beef is hot.
