Juicy, well-seasoned pork mince piled into warm tortillas and topped with a bright, zesty tomato salsa — this is a weeknight dinner that delivers big flavor with minimal effort. Everything comes together in 30 minutes, making it an easy go-to for taco night.

Ingredients
  • 1tbspolive oil
  • 500gpork mince
  • 2tbsptaco seasoning
  • 8piecesoft flour tortillas
  • 2wholetomato- finely diced
  • 1wholered onion- finely diced
  • 1bunchfresh coriander- roughly chopped
  • 1wholelime- halved

    Make the salsa

    Combine the finely diced tomato, red onion, and roughly chopped coriander in a bowl. Squeeze in the juice of half the lime, season with a pinch of salt, and stir to combine. Set aside — even 10 minutes of resting will help the flavors meld.

    Brown the pork

    Heat the olive oil in a large frying pan over medium-high heat. Add the pork mince and cook for 5–6 minutes, breaking it up with a spoon, until browned all over with no pink remaining.

    Stir in the taco seasoning and a splash of water (about 3–4 tbsp). Reduce the heat to medium and simmer for 4–5 minutes, stirring occasionally, until the liquid has mostly absorbed and the pork is fragrant and saucy.

    While the pork finishes, warm the tortillas one at a time in a dry pan over medium heat for 20–30 seconds per side, or wrap them in a damp paper towel and microwave for 30–40 seconds until soft and pliable.

    Spoon the pork mixture into the warm tortillas and top generously with the fresh salsa. Finish with a squeeze of the remaining lime half and serve immediately.
