Tender, flaky salmon fillets bathed in a rich lemon garlic butter sauce — this oven-baked dish comes together in under 30 minutes with minimal effort. It's elegant enough for guests but easy enough for a weeknight dinner.

Ingredients
  • 600gsalmon fillet- de-boned
  • 50gunsalted butter- melted
  • 3clovegarlic- minced
  • 1wholelemon- zested
  • 15gfresh parsley- finely chopped
Method
  1. 1

    Preheat the oven

Preheat your oven to 200°C (180°C fan / 400°F). Line a baking dish with foil or lightly grease it to prevent sticking.

  2. 2

    Make the lemon garlic butter

In a small bowl, combine the melted butter, minced garlic, lemon zest, and juice of the whole lemon. Season generously with salt and freshly ground black pepper and stir to combine.

  3. 3

    Prepare and coat the salmon

Pat the salmon dry with paper towels — this helps the butter sauce cling and promotes even cooking. Place it skin-side down in the prepared baking dish, then pour the lemon garlic butter evenly over the top.

  4. 4

    Bake the salmon

Bake for 15–18 minutes, depending on the thickness of your fillet. The salmon is done when it flakes easily with a fork at its thickest point but still looks slightly translucent in the very centre — it will finish cooking as it rests. Avoid overbaking to keep it moist and tender.

  5. 5

    Rest, garnish, and serve

Remove from the oven and rest for 2–3 minutes. Scatter the chopped parsley over the top and spoon the buttery pan juices over the salmon before serving.
