Ingredients
  • 1tbspolive oil
  • 1wholeonion- finely diced
  • 1wholered pepper- diced
  • 500gground beef
  • 2tbsptaco seasoning
  • 8pieceflour tortillas
  • 100giceberg lettuce- shredded
  • 2wholetomato- diced
  • 100gcheddar cheese- grated
  • 100mlsour cream
Method
  1. 1

    Sauté the aromatics

Heat the olive oil in a large skillet over medium heat. Add the diced onion and red pepper and cook for 4–5 minutes, stirring occasionally, until softened and the onion is translucent.

  2. 2

    Brown the beef

Increase the heat to medium-high and add the ground beef. Break it up with a wooden spoon and cook for 5–6 minutes until fully browned with no pink remaining. Drain any excess fat from the pan.

  3. 3

    Season the beef

Reduce the heat to medium, sprinkle over the taco seasoning, and stir well to coat the meat evenly. Add a splash of water (about 2 tbsp) to help the seasoning absorb and simmer for 2 minutes until the mixture is saucy and fragrant.

  4. 4

    Warm the tortillas

While the beef simmers, warm the tortillas one at a time in a dry skillet over medium heat for 20–30 seconds per side, or wrap the stack in a damp paper towel and microwave for 45–60 seconds until pliable.

  5. 5

    Assemble and serve

Spoon a generous portion of the beef mixture down the centre of each tortilla. Top with shredded lettuce, diced tomato, grated cheddar, and a dollop of sour cream. Serve immediately while the beef is hot.
